Mason Jar Triple Berry Salad with Strawberry Vinaigrette

IMAG4441I am trying to salad it up every day at work, so I’m always searching for new tasty salads to try to keep my salad eating habits something to look forward instead of a monotonous, sad affair. I’m so glad I decided to try a triple berry salad this week, it was super tasty and I ate it like it was pizza or tacos. I love a sweet and savory salad, so this one definitely meets that criteria. I used this Berry Walnut Spinach Salad recipe from The Busy Baker as my inspiration, but switched a few things up like always. I was sort of reluctant to include onions in the salad, so I swapped in some raspberries in place of those. Then instead of using that recipe’s dressing, I decided to make strawberry dressing instead.

This salad is made in record time, so the only step that’ll slow you down a teensy bit is making the strawberry vinaigrette. I used this recipe from and only swapped out the honey and used maple syrup instead (I never seem to have honey on hand, but there’s always maple syrup — and it works as a fine replacement, I’ve never had any issues so far). To make it, all I did was slice up half a package of strawberries and added them to my blender, along with the maple syrup, apple cider vinegar, olive oil, kosher salt and freshly ground better. I simple blended until combined…..

………and poured the dressing in a container for storing.

Then I chopped up a serving’s worth of spinach (about a cup and a half), then topped with some raspberries, sliced strawberries, blackberries, walnuts and blue cheese. Just top it all with the strawberry vinaigrette and you’re set!

This salad is so satisfying. I’m looking forward to eating it every day at work this week! And that was exactly the point. Ever since I tried making matcha green tea smoothies, I’ve been drinking smoothies for breakfast and eating salads for my work lunch. Making this simple switch to my daily routine has made me feel so much better throughout the day. While I like having tasty leftovers from the previous night to nom on, I prefer having a salad filled with fruits and vegetables because it gives me so much energy and makes me feel the perfect amount of full. Then I don’t have to feel guilty about the carbs I eat for dinner either. It’s a win win.
